Spicy Pickled Carrots & Creamy Yogurt Dip

For the dip combine:

  • 2 medium cloves garlic

  • ¼ tsp salt, plus more to taste

  • 1 medium cucumber, chopped

  • 1 cup lowfat plain yogurt

  • 1 tbsp fresh lemon juice

  • 1 tbsp extra virgin olive oil

  • 1 tbsp finely chopped fresh dill

  • ½ tsp ground black pepper

Serve the dip with Spicy Pickled Carrots and your favourite cracker or chip.
